Seaweed soup recipe for vegans

Shiitake and Nori Cream Soup(Vegan/Gluten Free)

Cooking Time: 30 Minutes

Ingredients (4 People):
3 Roscoff Onions
Olive oil
500g shiitake
1-litre vegetable stock
3 tablespoons dehydrated nori
20 cl fresh cream
salt, white pepper

1- Peel, wash and chop the onions. Sweat them with a little olive oil in a large saucepan and leave over low heat.

2- Mix the mushrooms in a food processor, add them to the onions, then wet with the vegetable stock. Cook until boiling then reduce heat and let simmer.

3- Heat a dry frying pan and roast the nori for a few seconds, stir, set aside.

4- Mix the mixture with a hand blender to obtain a velvety texture.

5- Add the crème fraîche and the toasted nori. Add salt and pepper to taste, adjust if necessary.
