Frédérique's nettle soup

Ingredients

For 4 persons

  • - A bowl of freshly picked nettles (ca. 100g)
  • - A handful of ramson.
  • - 1 spring onion leaf or 1 bunch of wild onions
  • - 4 or 5 starchy potatoes
  • - 800ml of water
  • - 1 bay leaf
  • - salt, pepper and nutmeg
  • - 1 tablespoon of white almond puree

Preparation

  1. Fry the leek or wild onion with some olive oil in a stew.
  2. Add the peeled and diced potatoes
  3. Stir, add the water, bay leaf, salt and nutmeg (or a tablespoon of vegetable stock powder)
  4. Cover and cook over a low heat for 5 minutes
  5. Add the nettles and continue cooking for a few more minutes.
  6. When the potatoes are tender, remove the bay leaf
  7. Add the almond puree and stir into the soup.

Enjoy this soup warm or cold and fill up on some vitamins and mineral salts! Nettle is one of the best remineralizing and vitalizing plants that nature offers us in spring!
